OBSERVATIONS AND CORRECTIVE ACTIONS
4-2B Violation of Code: [511-6-1.05(7)(b)] Observed during the time of this inspection multiple microwaves with old food debris on the inside ceiling food contact surface.
COS: Management had these surfaces cleaned.
CA: Management stated they will adjust the cleaning frequency of these surfaces to prevent possible food contamination.  Corrected On-Site.  New Violation.
4-2B Observed during the time of this inspection that a drink fountain in the front food service area had old syrup buildup on a food contact part of the machine.
COS: Management had the area cleaned.
CA: Management stated that they will re train employees to clean this part of the machine.  New Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Observed during the time of this inspection that multiple refrigeration units in the food prep area were causing tcs food to be time/temp abused.
COS: Due to the food being moved from operational cooling units to malfunctioning ones before opening management removed all foods from the malfunctioning units and placed them into properly functioning units.
CA: Management stated that they will only use refrigeration units that can hold tcs foods at or below 41 deg f. Management also stated that the malfunctioning units under the grill and salad prep will be restricted from use until repaired and checked by Glynn EH.

On 12/2/2022 Glynn EH performed an observation and document that the refrigeration unit was able to hold foods below 41 deg f after maintenance.  Corrected On-Site.  New Violation.
6-2 Violation of Code: [511-6-1.04(6)(g)] Observed during the time of this inspection that tcs food items such as steak/chicken/cooked vegetables were improperly labeled due to a malfunctioning computer system.
COS: Management had the dating system fixed and the appropriate labels made up and put on products.
CA: Management stated that they will begin monitoring the system as part of procedure to address any problems that come up.  Corrected On-Site.  New Violation.
11D Violation of Code: [511-6-1.05(2)(x)] Observed during the time of this inspection that multiple refrigeration units had no available thermometers inside of the units.
CA: Management stated that they will order the appropriate thermometers and have them placed inside of refrigeration units.  New Violation.
14B Violation of Code: [511-6-1.05(10)(g)2] Observed during the time of this inspection multiple clean utensils/plates being stored in ways that cannot prevent contamination.
CA: Management stated that they will re train staff to properly store utensils/plates in a way that will completely prevent contamination and to properly clean utensil storage areas and walls.  New Violation.
