11A Violation of Code: [511-6-1.04(6)(e)] Observed salsa being cooled (prepared on 08/29/2024 at 11:39 AM) in the walk in cooler were tightly wrapped.
Discussed with the person in charge that When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
Person in charge uncovered the salsa for cooling.  Corrected On-Site.  New Violation.
Remarks -Observed all foods are frozen solid in the walk in freezer
-Observed Quat sanitizer in the sanitizer bucket at 200 ppm
-Observed Chlorine sanitizer at the mechanical dish machine at 50 ppm
-Observed Employee Health Policy
-Observed V/D cleaning procedure
