Observed multiple TCS food items stored incorrectly in the Reach In Cooler in the main kitchen area: 1. Raw shelled eggs stored above RTE rice's. 2. Raw and cooked shrimp stored next to raw chicken.
CA: Items were stored per cook temperature. There was a food chart stored on the side of the cooler. Corrected On-Site. New Violation.

Observed multiple TCS and non-TCS food items stored on the stove and prep counter in the kitchen area: 1. White rice at 111 degrees F and ox tails at 124 degrees F on the stove (stove was not on). 2. Cooked chicken at 117 degrees F on a countertop. 3. Macaroni and cheese at 131 degrees F, and fried chicken at 132 degrees F in the Hot Box.
CA: Items were reheated. PIC stated that the items were cooked today and were being prepped/combined in other food items. New Violation.
