4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed fried okra, fried shrimp, fried tofu, and cooked chicken stored uncovered in the bottom of the prep top cooler in the main kitchen. Observed 3 water pitchers stored uncovered on the bar counter top in the front food service.
C/A: Food shall be stored covered in order to prevent the possibilty of contamination.
COS: Items covered.  Corrected On-Site.  Repeat Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Observed yougrt sauce and cream sauce holding above 41F on the counter top in the main kitchen. Observed somosas holding above 41F in the prep top cooler in the main kitchen.
C/A: TCS foods shall be maintained at 41F or below when cold holding.
COS: Items discarded.  Corrected On-Site.  Repeat Violation.
10D Violation of Code: [511-6-1.04(4)(d)] Observed mint sauce, tamarin, yogurt sauce, and cream sauce inside squeeze bottles with no labeling stored on the counter top in the main kitchen.
C/A: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.  New Violation.
