OBSERVATIONS AND CORRECTIVE ACTIONS
11A Violation of Code: [511-6-1.04(6)(e)] Observed several items (Red rice, Cajun rice) cooling in the Walk-in-Cooler, in a large container with the lid on. Advised PIC that, when cooling, lid should be left ajar or off so that heat is able to escape and cool air is able to flow over the food item. COS: PIC removed the lids so that heat can escape and the food items can receive proper air flow.  Corrected On-Site.  New Violation.
Remarks Observed vomit/fecal clean up kit.
Observed employee health policy that the establishment has in their employee manual with employees signature.
Observed recent food invoices: Kelly's Foods Atl., CDI
Observed grease trap invoice: Darling, 12.07.18, 1500 gallons
No recent pest control invoice available.
Sanitizer buckets: 200ppm, 200ppm, 200ppm Quat
Advisements:
-Obtain approved bleach in case of vomit/fecal incident. The kit the PIC showed me does have sanitizer, but it is often not enough in the case of an accident. Bleach shall be EPA registered and have a Sodium Hypochlorite concentration of 6.25%. Bleach shall not be meant for laundry, scented, or 'splash-less'.
Provided and discussed: Response Procedures for Vomit/Fecal Events, Employee Health agreement form, Employee Illness quick decision guide, and Clean-up and Disinfection for Norovirus.
Note: Technical difficulties with printer. Will bring inspection to restaurant on 3/12/19.
